- 2 cups (500 mL) cooked brown rice
- 1 tbsp (15 mL) extra virgin olive oil
- 1 tbsp (15 mL) lime juice
- 1 tsp (5 mL) ground cumin
- 1 tsp (5 mL) chilli powder
- Small handful cilantro leaves, sliced (keep some for garnish)
Mix all ingredients in a bowl and season to taste with salt and pepper.
Divide among four plates.
Garnish with reserved cilantro leaves.
